Creative ideas?
Okay, I am looking for something to cook for lunch today. Please include instructions. Here is what I have: Tomatoes, potatoes, spinach, parsley, ground beef, thin green peppers, and spices (salt, black and red pepper, cumin, and some other spices native to Tunisia, plus real garlic and onions and lemons). I do not have access to any pre-made foods or spices other than mentioned. Who can help me create a good meal?

- Other than just slow fried potatoes, and a casserole made of the burger, tomatoes, peppers, garlic, spices n onion, & spinach as a side dish with spiced lemonade to drink, Below is all I could come up with: Fried Spinach 6 ounces gound beef 1 1/2 T fish sauce 1 each onion 1 teaspoon black pepper 1 tablespoon cornstarch 1 each spinach 1 each tomato 1 each garlic clove 3 tablespoons vegetable oil Directions Chop onion finely and combine with meat, 1/2 teaspoon pepper, fish sauce and cornstarch. Rinse spinach and cut each leaf into 3 pieces. Slice tomato into thin wedges and crush garlic. Heat 1 1/2 tablespoons of oil in a frying pan. Add remaining garlic and stir fry until fragrant. Add spinach and stir fry for 3 minutes. Add tomato. Stir fry 2 minutes, then remove to a heated serving platter. Heat remaining oil in frying pan. Add meat and stir fry for 5 minutes. Add 2 tablespoons waterif meat sticks to pan. Remove meat from pan and sprinkle over spinach. Sprinkle with pepper and serve. Tunisian stew Ingredients: 1 lb. burger 1 1/2 cups thinly sliced onions 2 Tbs olive oil 1 cup spinach dash of salt 1 large green bell pepper, cut in thin strips 2 tsp ground coriander 1/2 tsp turmeric 1/4 tsp cinnamon 1/8 tsp cayenne pepper, (or to taste) 1 28 oz. can undrained, chopped tomato 1 cup diced potatoes 1/3 cup currents or raisins 1 Tbs fresh lemon juice Instructions: In a large non-stick oven, brown burger(drain fat),sauté the onions in olive oil for 5 minutes, or until softened. Add the spinach, sprinkle with salt, and continue to sauté for at least 5 minutes, stirring occasionally. Add the bell pepper, coriander, turmeric, cinnamon, and cayenne to the pot and sauté for another minute for so. Stir in the tomatoes, potatoes and currents or raisins, and simmer, covered, for about 15 minutes, until the vegetables are just tender. Add the lemon juice and salt to taste.

Try this: Potato, beef & spinach casserole 1 lb. potatoes, peeled 1 lb. lean ground beef 1 cup finely chopped onion (divided into 2 batches of 1/2 cup each) 2 tsp minced garlic 1 tsp salt 3 tsp olive oil 1/2 to 1 tsp red pepper (more if you like it spicy, less if you prefer mild foods) 16 oz. tomato puree (Put about 4-5 tomatoes into a blender, and blend them to make the puree.) 2 cups chopped spinach 1/2 cup green peppers, chopped Chopped parsley and lemon wedges, for garnish (optional) PREHEAT oven to 350°F. Meanwhile, Cook potatoes in large pot of boiling water for 5 minutes; drain and cool. Slice into thin slices. While potatoes boil, brown meat with 1/2 cup onion, garlic, salt, and red pepper in large nonstick skillet. If it is very lean meat, add about 2 tsp olive oil to the pan so that the beef doesn't stick. Make sure to stir occasionally. Drain excess fat, if necessary. Add tomato puree to skillet, and simmer on low for about 10 minutes, then remove from heat. Mix spinach and green peppers. Spoon half of the meat-tomato mixture into 8-inch square baking dish lightly greased with olive oil. Cover with half of the potatoes; top with layers of the spinach mixture, then another layer of remaining potatoes and a layer of remaining meat-tomato mixture. Sprinkle with the other 1/2 cup chopped onions. Cover with foil. BAKE 50 minutes. Remove foil. Bake an additional 10 minutes or until onions on top are soft. Serve garnished with chopped parsley & lemon wedges, if desired. Those who are served can squeeze the lemon wedge onto the dish if they like. :)

- Okay let see: I would put some olive oil on a frying pan, that has a top on. Put the beef, sliced on teen slaces or small chunks. Leave it there for 15 min or so on low fire with the top closed. Then I would add some salt to your prefferance, put the garlic and the onions in there sliced, also the green peppers (sliced as well to your prefferance. Add some spices now, the red pepper would be nice or whatever you think fits with the beef. Leave the pan open now and turn the fire up. It will take another 10 min or so for the beef to become red and the garlic and the annyons to fry. If it starts getting too dry you can add some more olive oil, but just a bit so it is still a healthy meal. At the same time I would put the potatos to cook in a boiling water, add the spinach in it about 10 min later. It should be all done 10 min later - but check the potatos if they are done (cut them in chunks so they cook faster). When both spinach and potatos are done, pur water out. Put some sliced garlic in a pan or hot olive oil (just a lil oil) and leave them to fry just for few min, then add that to the spinach and the potatos and also add olive oil and salt to the whole thing, I would add some black pepper in there too. You can also make a tomato salad with onions and olive oil. (as you can see by now - I love olive oil lol!).
