how can i store vegetables for long periods of time as i want to buy in bulk to save money.?
Just looking at basic stuff that we seem to consume regularly -potatoes, carrots and pumpkin. If this is a possible money saver i also would like to know of any others that could be bought in bulk and stored.

- depending on the veggie, you can freeze them.
- Keep it in the fridge, Onions and potatoes you should keep in open. They last for atleast 2 weeks.
- If you check out the frozen foods section in your grocery store, those are the types of veg which freeze well. Buying potatoes in bulk - they need to be stored in a cool, dark place so that they don't go green (poisonous). You could store carrots and turnips ... They also need to be in an environment where mice can't find them. :) M
- For really long term storage, they'd have to be canned. You can can food at home with a pressure cooker , some jars/lids and some basic knowledge of preserving foods - found online or in cookbooks. Some foods don't can well, just as some dont freeze well, you'd just have to research (grandmothers are great for this kind of stuff, they used to preserve food, rather than buy expensive store bought stuff) Root veggies (potato, carrot, onion, yam, beets, etc) can be stored fresh in a cool, dry, ventilated place away from sunlight for up to several months if the conditions are right. Hence the term 'root cellar'. Apples also save well in this manner, as do tomatoes if they are picked when not yet ripe - the way to store them is to get a cardboard box, place a layer of fruit, cover with a layer of newspaper, then more fruit/paper layers untill the box is full. If green tomatoes are stored in this way at the end of summer, they will slowly ripen and you can have fresh tomatoes all year. A few may spoil, but the paper will slow the mould from getting to the rest of the fruits.
